Strawberry Ice Cream

Pink and sweet, so yummy!

Ingredients

200 g / 7.05 oz strawberries
25 g / 0.88 oz icing sugar
1 tsp / 1 tsp honey
100 ml / 3.38 fl oz heavy cream (35% fat)
30 g / 1.06 oz blueberries (optional)

Method

  1. Wash and hull the strawberries, then chop them. Set aside 25 g and blend the rest into a purée.
  2. Add the icing sugar and honey to the strawberry purée.
  3. Whip the cold cream until it reaches a yogurt-like consistency.
  4. Gently fold the whipped cream into the purée. Add the reserved chopped strawberries and halved blueberries.
  5. Fill the Ice Lollipop moulds and freeze for at least 5 hours.
  6. Once out of the freezer, wait 3 minutes before removing the ice lolly from the mould.
  7. Your strawberry ice Lollipops are ready to enjoy!
